杨兴斌男,196910月生,汉族,陕西榆林市横山人,现为乐动体育app在线网址院长、教授、博士生导师,省部级劳动模范。1997年获北京化工大学精细化工工学硕士学位,2004年获空军军医大学(原第四军医大学)医(药理)学博士学位。澳大利亚西澳大学(University of Western Australia)访问教授。兼任陕西省食品科学技术学会理事长等社团职务。现任陕西省食品绿色加工与安全控制工程实验室主任、陕西省农产品贮藏加工危害因子风险评估实验室主任、陕西省食品科学与工程实验教学示范中心主任,以及教育部药用资源与天然药物化学重点实验室、西北濒危药材资源开发国家工程实验室的学术带头人。担任Frontiers in NutritionIF=6.576)副主编和Food & FunctionIF=5.396)编辑顾问委员等,发表SCI杂志论文200余篇,论文H指数为42。报批并商品化国食健字号的水苏糖配料微生态保健食品2个、益常顺牌绿茶速溶茶和茯茶益生元速溶茶产品2个,开发了大豆金花益生菌发酵国体饮料和酵素等系列功能食品产品。目前主要从事食品化学与加工工程、肠道微生态营养与代谢、茯砖茶金花菌发酵保健食品及特膳食品研究工作。

1)基础理论研究:创立了血管内皮舒张因子NO代谢物NO3-NO2-“NO”RSNOs的高灵敏度GC-MS和化学发光分析技术,为准确研究NO代谢及食品血管营养提供了国际领先水平的技术参考;发现生物样品预处理中清除干扰物NO2-的酸性磺胺可导致“NO”RSNOs分解而低估RSNOs测定值,并确立了最适磺胺浓度,澄清了长期以来备受争议的该分析方法低估NORSNOs的事实,为血管分子营养评价提供可靠指针,且发现长期被推测为致癌的限量摄入物硝酸盐、亚硝酸盐及富含硝酸盐的菠菜在维持血管内皮功能稳态中的重要营养价值;针对当前F2-isoprostanes20-HETE等细胞膜花生四烯酸氧化损伤代谢物标志分子的GC-MS 分析技术缺陷进行了方法学完善,并基于高灵敏度的UPLC-Q-TOF-MS/MSGC-MS分析手段,建立了高果糖诱导小鼠肝脏氧化应激损伤的代谢组学分析方法和脂肪酸代谢轮廓谱研究方法;构建了TMAO/TMA/DMA的同时LC-MS/MS同位素标记分析技术,首次发现含三甲胺结构的卵磷脂等甲基供体营养素经肠道生理菌群代谢产生氧化三甲胺(TMAO)进而诱导肝损伤危害,拓展了卵磷脂等营养素的营养与安全“利与弊”的科学认知。

系统研究秦巴山区植源性功能糖(寡糖、多糖等)与类黄酮的营养聚集化精深加工和营养调控分子机制,发展了小肠II相代谢酶(SULTUGT)和外排转运蛋白(P-gpMRP1)是限制类黄酮肠吸收的关键调控靶点,揭功能糖与类黄酮的营养互作理论,提出食品营养物质基础整体观的“网络食品功能学”研究技术;发现大豆水苏糖和多糖等功能糖基于肠菌群代谢产生的琥珀酸激活肠道糖异生进而发挥间接的体内血糖稳态调控机制;发现茯砖茶多糖较其原料黑毛茶多糖有显著的脂肪产热活性,揭示茯砖茶独有的贮藏发花加工所产生的特色金花冠突散囊菌及其胞外多糖是茯砖茶发挥脂肪产热的关键营养物质基础。

2)产品产业服务:参与驰名产品“白加黑”感冒药双层缓释片的研发工作(德国拜耳公司);先后为企业开发爽QQ牌水苏糖口香糖(企业标准Q/DSP 010-2007)、肠内美人牌水珍唯美食品、水苏冲剂(国食健字G20040234)和德施普粉(国食健字G20080008)等系列功能或保健食品(市场化商品),产生重要的经济与社会效益;研究猕猴桃的采后气体射流冲击干燥和冷冻干燥技术及理论,开发猕猴桃的休闲食品;开发马铃薯主食化或茯砖茶配伍的馒头与面条食品及低血糖生成指数(GI)食品;基于功能糖与多酚的互作营养理论,开发益常顺牌茶多酚复合益生元速溶茶和固体饮料、速溶益生茯砖茶、大豆(冠突散囊菌)益生菌发酵国体饮料和酵素等肠道微生态功能食品;成功研制水槽升降式新一代豆芽机食品装备。熟悉保健食品的申报注册工作,具备丰富的生物制品产、学、研一体化与产业战略发展管理经验。

5)科技项目与获奖:先后主持国家自然科学基金面上项目5项及国家重大科技专项等项目10余项。先后获“天然多糖及寡糖的色谱质量控制技术构建与生物功能研究”、“食物类黄酮与功能糖的化学与分子营养的应用基础研究”、“功能糖与类黄酮的分子营养及互作机制研究”等陕西省科技进步一等奖1项、二等奖2项和陕西高等学校科学技术一等奖2项、二等奖1项;2018年获得第二届全国沙产业创新创业大赛“双创之星”荣誉称号。2011年获中国食品产业产学研创新发展杰出科研人才奖,2013年获陕西省职工优秀科技创新人物称号,2014年获省部级劳动模范、全国模范军队转业干部称号(中共中央组织部等四部委“国转联[2014]4号文件”联合授予)2014年入选陕西省中青年科技创新领军人才2019年入选陕西省创新人才推进计划(科技创新团队)。

2)鼓励交叉学科学习或研究经历的学生报考:化学专业或化学基础扎实或拟致力于食品营养成分提取纯化、工业生产或保健食品制造等在食品化学方向开展研究工作;致力于发展或应用GC-MS/MSLC-MS/MSUPLC-Q-TOF-MS/MS等分析方法,研究食品发酵等加工中的化学与营养问题,以及分子营养与营养代谢组学,等。

3)培养定位:对于硕士研究生,主要努力培养国际水准的研究技术和前沿科学理论技能,鼓励毕业后赴国内外高水平大学继续攻读博士研究生学位;对于博士研究生,通过海外联合培养等途径,培养国际学术视野,就业目标为高水平国内大学或科研院所等,近年来取得较满意的效果。
